This is my husband's third recipe! Using tofu makes it easy on your wallet and healthy, too. It's a delicious recipe.

This is my husband's third recipe! Using tofu makes it easy on your wallet and healthy, too. It's a delicious recipe.

Steps

Cut the tofu horizontally into 4 thin, even slices. Place the slices on a paper towel.

Gently press the tofu slices with another paper towel to remove excess moisture. (No need to microwave.)

Make 2 sandwiches by layering tofu on the top and bottom with a slice of cheese in the middle. Use a spatula to move the tofu to prevent it from breaking.

Lightly coat each sandwich with flour, dip in beaten egg, then cover with panko breadcrumbs. For the bottom, press into the panko; for the top, sprinkle panko over.

Heat oil in a skillet over medium-low heat. Cook the cutlets for about 3 minutes. Pour any leftover egg mixture over the top so it doesn't go to waste.

Carefully flip the cutlets with a spatula, add a little more oil if needed, and cook for another 3 minutes.

Slice the cutlets for easy serving and arrange on a plate so the melty cheese is visible. Enjoy!

They're delicious as is thanks to the cheese, but if you like, add salt and pepper to taste.
