Coat both sides of the pork slices with potato starch.

Heat the oil in a skillet over low heat. Add the onion and sauté until it softens.

Once the onion is soft, add the pork and cook over medium heat. (Note: The photo shows the onion removed, but it should stay in the pan.)

When the pork changes color, add the sauce ingredients (soy sauce, sake, mirin, sugar, and ginger). Stir to coat, then turn off the heat. Serve on a plate with your choice of sides, such as cucumber or tomato.
