French Chicken Broccoli Supreme

This is a family favorite, but not exactly on the light side. Easy to make and good for a pot luck. It's a slight modification of a recipe I found on a cooking blog somewhere but the link is now broken. Please let me know if you find the author and I'll give credit for sure!
French Chicken Broccoli Supreme
This is a family favorite, but not exactly on the light side. Easy to make and good for a pot luck. It's a slight modification of a recipe I found on a cooking blog somewhere but the link is now broken. Please let me know if you find the author and I'll give credit for sure!

Grease a 13x9 casserole dish. Place broccoli and chicken at the bottom of the dish. Set aside.

Dissolve corn starch in water.

Melt butter in a medium saucepan over medium heat. Add corn starch mixture, broth, milk, salt and pepper. Cook until sauce has thickened, stirring frequently.

Reduce heat to low. Add half of the cheese (1 1/2 cups). Remove from heat once the cheese is melted.

Pour sauce over chicken and broccoli. Top with remaining cheese.

Crush crackers in a one-gallon zip-lock bag. Add poppy seeds and shake until distributed evenly. Add melted butter. Shake until crackers are coated. Spread over top of casserole.

Bake uncovered at 350° for 30 minutes or until bubbly.
