I used my grandmother's and mother's gyoza recipes as a reference and made them with crispy wings like the ones in SPEC.

After watching SPEC, I really wanted to eat delicious gyoza...
I used my grandmother's and mother's gyoza recipes as a reference and made them with crispy wings like the ones in SPEC.
Steps

Mix the ground pork well with the sesame oil.

Roughly chop the cabbage.

Finely chop the cabbage in a food processor.

Finely chop the garlic chives (nira).

Blend the ginger, garlic, miso, and soy sauce in a food processor or blender.

Add the mixture from step 5 to the pork, then add the well-drained cabbage and chives, and the salt and pepper. Mix everything together.

Wrap the filling in the gyoza wrappers and cook right away. (If you let them sit, the wrappers may get soggy from the moisture.)

Heat oil in a frying pan over medium heat. Arrange the gyoza in the pan.

Mix the water and cornstarch well, then pour it over the gyoza in the pan.

Immediately cover with a lid and cook for 4 minutes over medium-high heat.

After 4 minutes, remove the lid, drizzle 1 tablespoon of oil around the pan, and cook on low heat until the bottoms are crispy.

When the crispy wings start to lift from the pan, wait a little longer until they get a nice golden color.

Once the wings are fully crisp and the bottoms are golden brown, they're done. Remove from the pan.

Enjoy the crispy outside and juicy inside!

For boiled gyoza, cook in boiling water for 4–5 minutes.
