Ingredients

6 rice balls
  1. 4 bowlscooked rice
  2. 1 1/2 tablespoons (22 ml)miso (A)
  3. 1 tablespoon (15 ml)mirin (A)
  4. 1 tablespoon (12.5 grams)sugar (A)
  5. 1 tablespoon (15 ml)soy sauce (B)
  6. 1 tablespoon (15 ml)mirin (B)
  7. 1 tablespoon (15 ml)noodle soup base (mentsuyu) (B)
  8. 1/2 tablespoon (6 grams)sugar (B)

Steps

  1. 1

    Shape the cooked rice into onigiri (rice balls). For this recipe, use 2 bowls of rice to make 3 small rice balls.

  2. 2

    Mix the A ingredients to make the miso sauce, and mix the B ingredients to make the soy sauce glaze. Both are on the sweeter side.

  3. 3

    Pan-fry the rice balls over medium heat. Pour the sauce along the side of the rice balls into the skillet (do not pour directly onto the rice balls).

  4. 4

    Once the bottom is browned, flip the rice balls and cook the other side the same way. When both sides are browned, they’re done.
