Heat butter in a skillet and sauté the finely chopped onion. Add the chicken cut into 1/2-inch cubes, then add ketchup and stir until everything is coated.

Add the cooked rice and season with salt and pepper. Stir-fry until well combined.

For each serving, mix together 3 eggs and about 1 tablespoon of mayonnaise.
