Ingredients

Serves 2 servings
  1. 1 cupuncooked white rice (about 180 grams)
  2. 4.5 ozboneless, skinless chicken thighs (about 130 grams)
  3. 1/2onion
  4. as neededButter,
  5. 6eggs
  6. 2 tablespoonsmayonnaise
  7. Salt and pepper, to taste
  8. Parsley, to taste

Steps

  1. 1

    Heat butter in a skillet and sauté the finely chopped onion. Add the chicken cut into 1/2-inch cubes, then add ketchup and stir until everything is coated.

    Add the cooked rice and season with salt and pepper. Stir-fry until well combined.

    For each serving, mix together 3 eggs and about 1 tablespoon of mayonnaise.

    Heat butter in a skillet over high heat. Swirl the egg mixture to make a soft, slightly runny omelet, then place it on top of the rice.
