Soft and chewy pancakes perfect for babies in the late weaning or completion stage.

The gentle sweetness of tofu makes these a great snack for moms who are dieting or breastfeeding, too!
Recipe background:
I wanted to make pancakes for breakfast, but realized I was out of milk. I thought about substitutes—soy milk? Then I tried tofu! The result was these tofu pancakes. They turned out fluffier than I expected, and my daughter loved them. This recipe was a happy discovery!

Ingredients

Makes 2–3 servings for a baby
  1. 1 1/4 cups (150 grams)pancake mix
  2. 5.3 oz (150 grams)tofu
  3. 3 1/2 tablespoons(about 50 ml) water (or milk)

Steps

    In a bowl, combine the pancake mix, tofu, and water. Add the water gradually while mixing with a whisk.

    The batter should be thick and heavy. Heat a skillet over medium-low heat. Scoop about 1 tablespoon of batter for each pancake, making small mounds.

    When the edges start to turn slightly golden (about 5 minutes), flip the pancakes, cover with a lid, and cook for another 5 minutes. If a toothpick inserted in the center comes out clean, they're done.

    These thick, fluffy pancakes are a favorite! Even adults can enjoy them without honey.
