Ingredients

  1. 1large egg
  2. 1-1 1/2 teaspoonssugar
  3. 1 pinchsalt
  4. 1 teaspoonmilk (optional)
  5. as neededOil,
  6. [Dashi-maki Version]
  7. 1large egg
  8. 1-1 1/2 teaspoonssugar
  9. 1/3 teaspoondashi granules
  10. 1 teaspoonmirin or water (optional)

Steps

    Crack the egg into a bowl and add the ingredients marked with ☆.

    Tilt the bowl and use chopsticks to gently cut through the egg whites in a straight motion to mix. This helps break up the whites for a smoother omelet.

    Add a generous amount of oil to the lower half of a tamagoyaki (rectangular) pan and swirl over medium heat to coat. Approximate amounts are fine.

    Pour in the egg mixture in three batches. Lower the heat slightly. For the first batch, pour in more egg mixture. When the edges start to set, roll it up from one end.

  5. 5

    If some uncooked egg spills out while rolling, don't worry—just keep rolling. Once finished, move the rolled egg to the edge of the pan.

  6. 6

    After the first roll, flip the omelet over so the top and bottom are switched. This helps the omelet cook evenly since the bottom tends to be thicker.

    For the second and third batches, pour in more egg mixture and roll up again. When pouring, lift the rolled omelet slightly with chopsticks so the egg mixture can flow underneath.

    After the third roll, if you like a light golden color, briefly sear both sides to add a bit of browning.

    Transfer to a cutting board, slice, and enjoy!
