Steps
- 1
Cook off ground beef (or meat of your choice). Drain and set aside.
- 2
Rinse and dice all vegetables. Begin to saute all peppers and onions until they sweat just a little.
- 3
Add vegetables and meat to large pot or kettle. Maintain on medium heat.
- 4
Drain and rinse kidney beans. Add to pot or kettle. Stir well.
- 5
Continue to maintain over medium heat for 10 to 15 minutes. Stir occasionally. This allows the beans, vegetables and meat to begin complimenting each other.
- 6
Add diced and stewed tomatoes. Stir well. Incorporate dashes of worchestershire sauce. Add 1/2 bottle green tabasco sauce. (whole bottle for extra heat)
- 7
Season with chili powder, salt, pepper, oregano, and basil to taste. Allow to continue cooking over medium heat for 30 to 60 minutes, stirring occasionally.
- 8
Add sweet yellow corn and green chiles including liquid in can. Dice green chiles if not diced already. Stir well.
- 9
Allow to simmer over medium heat for 15 to 20 more minutes. Stir occasionally. Add a bit of water or vegetable stock if it comes out a bit thicker than you like.
- 10
Recipe serves 8 to 12 depending on appetites. Jalapeños can be diced and added in step 2 for those that like an extra kick. Enjoy!!
