Feel free to add garlic or ginger if you like, and drizzling soy sauce around the edge of the pan will add a nice aroma. Adding sesame oil or sprinkling sesame seeds will make it even more delicious. If you add raw meat or vegetables, cook them before adding the rice.

Rice, eggs, and mayonnaise. These three are the basics. Coat the rice with the oil from the eggs and mayonnaise.

Mix the rice, eggs, mayonnaise, and Chinese soup base in a bowl. Any soup base will do, even something like Ajinomoto.

Once each grain is well-coated with the oil from the eggs and mayonnaise, drizzle a little soy sauce and mix. Deciding the flavor first prevents rushing later.

Spread in a frying pan and cook slowly over medium heat to evaporate the moisture from the egg whites. No oil is needed because of the mayonnaise.

Stir occasionally while breaking it up, checking the fluffiness. Be careful not to stir too much. Cook thoroughly. It's quite fluffy now.

Add your favorite ingredients. Dicing them small makes it look more authentic. This time, I added char siu and imitation crab.

Mix a little to blend, then add green onions and stir-fry further. Adjust the taste with salt and pepper to finish.

Serve in a bowl, let it steam for about a minute, then transfer to a plate for a moist, restaurant-like finish.
