Place the small shrimp in a bowl, add potato starch, a pinch of salt, and a little water (not listed in ingredients). Rub together, then rinse under running water to remove any odor.

Bring a pot of water to a boil. Add the cleaned shrimp, cooking sake, and a pinch of salt. Boil until the shrimp are cooked through, then drain in a colander. Let cool, then chill in the refrigerator.

Cut the avocado in half and remove the pit. Scoop the flesh into a bowl and mash. Mix in the mayonnaise, lemon juice, olive oil, salt, and black pepper.

Spread a thin layer of mayonnaise (not listed in ingredients) on your choice of bread. Add sliced cheese and lettuce, then top with the chilled shrimp and avocado mixture. Close the sandwich.

For extra flavor and volume, add sliced onions, tomatoes, or other toppings depending on the type and size of your bread.
