Ingredients

Serves 2 to 3 servings
  1. 1 bunchgarlic chives
  2. 2eggs
  3. 7 ozpork strips
  4. 1/2 tablespooneach ● sake, soy sauce, cornstarch (for marinating meat)
  5. 1/2 tablespooneach ★ sake, mirin, soy sauce (for finishing meat)
  6. 1/2-1 teaspoon◎ Hondashi (for garlic chives & eggs)
  7. Salt and pepper to taste

Steps

  1. 1

    Marinate the pork strips with the ● ingredients.

    Cut the garlic chives into 1 1/2-inch pieces. Beat the eggs with a pinch of salt and 1/2 teaspoon or more of Hondashi until well mixed.

    Heat a generous amount of oil until hot, then pour in the egg mixture all at once. When the edges start to set, stir quickly with a spatula while shaking the pan, then remove immediately.

    Stir-fry the garlic chives with a pinch of salt and 1/2 teaspoon or more of Hondashi, then remove from the pan.
    *Do not overcook.

    The pork will initially clump together, so break it apart with chopsticks while stir-frying. Once cooked through, season with ★ ingredients and plenty of pepper.

    Return the garlic chives to the pan and mix roughly.

    Turn off the heat, then return the eggs to the pan and mix roughly.
    *Adjust the seasoning with salt if needed.
