Chilled Soba with Ume Nametake Daikon and Grilled Eggplant

This healthy chilled soba features ume-flavored nametake daikon and thinly sliced shiso for a refreshing taste, plus hearty grilled eggplant. Even though it's all vegetables, it's filling and satisfying!

Chilled Soba with Ume Nametake Daikon and Grilled Eggplant
This healthy chilled soba features ume-flavored nametake daikon and thinly sliced shiso for a refreshing taste, plus hearty grilled eggplant. Even though it's all vegetables, it's filling and satisfying!

Grate the daikon radish. Pit and mash the umeboshi. Boil the nametake mushrooms for about 1 minute, then drain and cool under cold water. Mix these together well.

Cut the eggplant into bite-sized pieces. Heat oil in a frying pan and grill the eggplant on both sides until golden brown. Set aside. Thinly slice the shiso leaves.

Cook the soba noodles according to package instructions. Rinse in ice water to chill, then drain and place in a serving bowl. Pour the diluted mentsuyu over the noodles. Top with the ume nametake daikon mixture and grilled eggplant. Garnish with sliced shiso. Enjoy!
