This healthy chilled soba features ume-flavored nametake daikon and thinly sliced shiso for a refreshing taste, plus hearty grilled eggplant. Even though it's all vegetables, it's filling and satisfying!

Ingredients

Serves 1 serving
  1. 1.8 oz (50 grams)dried soba noodles
  2. ☆ Ume Nametake Daikon
  3. About 2 inches (5 cm) grated daikon radish
  4. 1umeboshi (pickled plum)
  5. Halfa pack (about 1.8 oz/50 grams) nametake mushrooms
  6. ☆ Grilled Eggplant
  7. 1eggplant
  8. as neededOil,
  9. 5shiso leaves
  10. 1/2 cup (100 ml)mentsuyu (noodle soup base), diluted to taste

Steps

  1. 1

    Grate the daikon radish. Pit and mash the umeboshi. Boil the nametake mushrooms for about 1 minute, then drain and cool under cold water. Mix these together well.

    Cut the eggplant into bite-sized pieces. Heat oil in a frying pan and grill the eggplant on both sides until golden brown. Set aside. Thinly slice the shiso leaves.

  3. 3

    Cook the soba noodles according to package instructions. Rinse in ice water to chill, then drain and place in a serving bowl. Pour the diluted mentsuyu over the noodles. Top with the ume nametake daikon mixture and grilled eggplant. Garnish with sliced shiso. Enjoy!
