There are many types of chilaquiles—red, green, with different chiles, with meat, chicken, sour cream, and cheese. My version uses chorizo.

There are many types of chilaquiles—red, green, with different chiles, with meat, chicken, sour cream, and cheese. My version uses chorizo.
Steps

Wash the tomatoes and peppers. Cook them with the garlic and onion. Once cooked and cooled, transfer to a blender. Blend until smooth, add salt, and set aside.

Finely chop the chorizo and fry it. When it starts to brown, add the chopped onion.

Once the chorizo is cooked, add the sauce and cook for about 3 minutes.

Add the eggs and let them cook. Then add the tortilla chips, breaking them up a bit. Let everything cook together.
