Ingredients

50 minutes
Serves 4 servings
  1. ~ Red Sauce ~
  2. 8tomatoes
  3. 1/4onion
  4. 2 clovesgarlic
  5. 5serrano peppers (or to taste)
  6. Salt, to taste
  7. 10 1/2 ozchorizo (300 grams)
  8. 2eggs per person
  9. 1 bagtortilla chips
  10. 1/3onion, finely chopped

Steps

50 minutes
  1. 1

    Wash the tomatoes and peppers. Cook them with the garlic and onion. Once cooked and cooled, transfer to a blender. Blend until smooth, add salt, and set aside.

  2. 2

    Finely chop the chorizo and fry it. When it starts to brown, add the chopped onion.

  3. 3

    Once the chorizo is cooked, add the sauce and cook for about 3 minutes.

  4. 4

    Add the eggs and let them cook. Then add the tortilla chips, breaking them up a bit. Let everything cook together.

  5. 5

    Enjoy!
