Ingredients

Makes 6 pancakes using 3-inch round molds

Batter
3/4 cupcake flour (100g)
1 teaspoonbaking powder
2egg yolks
1/3 cupmilk (70ml)
1 1/2 tablespoonsheavy cream (20ml)
1 1/2 tablespoonsbutter (20g)
2–3 drops vanilla extract
2egg whites
1/4 cupsugar (50g)

Prep:
Sift the cake flour and baking powder together. Melt the butter.

In a bowl, whisk the egg yolks until pale. Add the milk and heavy cream and mix.

Add the sifted dry ingredients to the egg yolk mixture and combine.

In a separate bowl, beat the egg whites with a hand mixer. Add the sugar in two parts while beating, and whip until stiff peaks form.

Gently fold the meringue into the batter, being careful not to deflate it. Add the melted butter and vanilla extract and mix gently.

Cook on a skillet or griddle over very low heat with a lid on. (The photo uses a 3-inch round mold.)

Serve with maple syrup, honey, or your favorite toppings.
