2boneless, skin-on chicken thighs
1 pinchsalt and pepper
1 tablespoonvegetable oil
1 tablespoonsoy sauce
1 1/2 tablespoonssugar
1/2 tablespoonmirin
2 teaspoonsvinegar

Lightly season both sides of the chicken with salt and pepper. In a small bowl, mix together the soy sauce, sugar, mirin, and vinegar.

Heat the vegetable oil in a skillet over medium heat. Place the chicken in the pan, skin side down, and cook until the skin is golden brown.

Once browned, flip the chicken, cover with a lid, reduce the heat to low-medium, and steam-cook for 8–10 minutes.

Remove the lid, turn the heat back to medium, and pour the prepared sauce over the chicken.

Turn the chicken occasionally, coating both sides with the sauce, and let it simmer until the sauce thickens. Once the sauce is glossy and thick, remove from heat.

Let the chicken cool slightly, then slice and serve on a plate.
