Crab Stick, Broccoli, and Tofu Cream Croquettes

I wanted to create a healthy dish that could replace my favorite cream croquettes, so I came up with this easy recipe inspired by tofu gratin, Korean pancakes, and crab omelets.

Steps

Cut the imitation crab sticks into 3/4 inch pieces and shred them. Chop the broccoli into small pieces and finely chop the onion.

Add the flour to a frying pan and whisk until smooth. Gradually add the milk while stirring to dissolve.

Add the silken tofu and whisk until smooth. Turn on the heat to medium-low.

Continue stirring with a wooden spatula. Once it starts bubbling, add the crab sticks, broccoli, onion, salt, and nutmeg, and mix well.

Once the broccoli and onion are cooked and the mixture comes together, turn off the heat.

Add the potato starch and mix well, then add the mayonnaise and mix again.

Place the frying pan on a damp cloth to cool. It will cool quickly.

Prepare a bowl with plenty of breadcrumbs.

Once cooled, scoop the mixture with a large spoon and drop it into the breadcrumbs. (Makes 6 pieces)

Cover with plenty of breadcrumbs using the back of the spoon to shape them. Make each one and place them on a tray.

After covering with breadcrumbs, you can touch them without sticking, so use your hands for a neat finish.

Pour about 3/4 inch of vegetable oil into a frying pan and heat until small bubbles form around a chopstick.

Place the croquettes on a wooden spatula and gently lower them into the oil. Fry both sides until the breadcrumbs are crispy and golden brown.

When flipping or removing, use chopsticks to help lift the croquettes with the wooden spatula.

When removing, press the croquettes with chopsticks on the spatula to drain the oil well.

Place on a rack to drain excess oil, then serve. Add sauce if desired.
