Cooking Instructions
- 1
Pound chicken breast till about 1/4 inch thick. Season with salt, pepper, garlic powder and italian seasoning.
- 2
Dredge in flour and cook in 1Tbl butter and 1 Tbl olive oil over medium heat till lightly golden brown. Remove and drain on paper towel or rack
- 3
In same pan you cooked chicken in, add the other 2 Tbls. of butter and saute mushrooms till tender. Sprinkle with about a tsp. of flour and stir letting cook 1 to 2 more minutes.
- 4
Add wine and broth to pan and scrape all the goodies up from the bottom and bring to light boil. Reduce heat to med/low and reduce liquid by a little less then half.
- 5
Place chicken back into pan (if oven safe you can bake everything in the same pan) or place chicken in baking dish and pour the reduced sauce over the chicken.
- 6
Top with cheeses and bake in oven 350°F till cheese is melted and all gooey, bubbly and golden.

Chicken Lombardy Chicken Lombardy
Chicken Lombardy is a a delicious simple chicken entree that seems to have different origins. I have read it came from Wisconsin but also that it began in Italy so wherever it began it has many variations but is always pan seared chicken breasts with mushrooms and marsala wine. This is my version. fenway -

Chicken lombardy (naked pasta) Chicken lombardy (naked pasta)
My kids renamed this dish to naked pasta because there’s no red sauce. Lol. I added some tomatoes to this for the adults. 🌈NinjaMommaKitchen🌈 -

Chicken Savoy Chicken Savoy
My father asked me to come up with a recipe for this tasty chicken. Named in and served at a particular restaurant, he wanted to enjoy this at home. This is my second attempt that was as close he said to what he remembers. It put a smile on his face and we cleaned the plates on both attempts but this time was even better! For you dad!! Chicken Campagnola Chicken Campagnola
There is this great little Italian Restaurant in the Irish section of the Bronx. A perfect place for me to frequent, considering my background. They have a lot of great dishes, but there is one dish that I love the most. It has potatoes, sausages, peppers, and chicken. All of my favorites ingredients in one dish. Two weeks earlier, my family and I went there for my sister's birthday. Of course, I had this dish. After dinner on the ride home, I told my wife that I will make that dish. Not sure how, but I will do it.I went to the store and blindly bought what I thought may be in the dish. Did I get the right stuff? Did I miss anything? Did I create a totally new dish? No idea, but to me, my version is way better. No offense to my favorite restaurant. As always, this dish is open for interpretation. You can try it as is or fiddle around with it. It can be served over pasta or rice or even alone. It is up to you. #mycookbookEnjoy! J.A.B. -
