Cooking Instructions

Trim any yellow fat from the chicken. Use a fork to poke holes in both the skin and meat sides to help the flavors soak in.

Place the chicken and all the marinade ingredients (marked with *) into a bowl or zip-top bag. Massage well and let marinate for at least 2 hours.

Preheat the oven to 375°F (190°C). Place the chicken skin-side up and bake for 35 minutes. If it looks like it's getting too dark, lower the temperature to 350°F (180°C) partway through.

Let the chicken rest until cool enough to handle before cutting. Cutting too soon will cause the juices to run out.
