This is easier and tastier than making it in a frying pan. The skin turns out crispy and the flavor soaks in nicely.

Ingredients

  1. 2boneless, skin-on chicken thighs
  2. 3 tablespoonssugar
  3. 2 tablespoonssake (Japanese rice wine)
  4. 3 tablespoonssoy sauce
  5. 1 clovegarlic, grated
  6. 1 piece(about 1-inch) ginger, grated

Cooking Instructions

  1. 1

Trim any yellow fat from the chicken. Use a fork to poke holes in both the skin and meat sides to help the flavors soak in.

  2. 2

Place the chicken and all the marinade ingredients (marked with *) into a bowl or zip-top bag. Massage well and let marinate for at least 2 hours.

  3. 3

Preheat the oven to 375°F (190°C). Place the chicken skin-side up and bake for 35 minutes. If it looks like it's getting too dark, lower the temperature to 350°F (180°C) partway through.

  4. 4

Let the chicken rest until cool enough to handle before cutting. Cutting too soon will cause the juices to run out.
