In a large, heavy pot, heat olive oil on medium high heat.

When oil is hot, press the ground beef into the pot to form one large patty. Let the patty brown undisturbed for 8–10 minutes.

Stir and crumble the beef, cooking until no longer pink.

Add onion, celery, and bell pepper. Cook for 5 more minutes, until the onion is translucent.

Stir in crushed tomatoes, tomato sauce, and Rotel.

Stir in water and both cans of beans.

Add McCormick Mild Chili Seasoning, salt, and pepper. Stir well to combine.

Bring the chili to a boil, then reduce heat to low.

Simmer uncovered for 1 hour, stirring occasionally.

Just before serving, stir in the white vinegar.

Serve hot, topped with shredded cheddar cheese, sour cream, and scallions. Enjoy with saltines or tortilla chips.
Tips
For extra flavor, consider adding a dash of hot sauce or your favorite spices.
