Ingredients

12-15 minutes
3-4 waffles
  • 1 cuppancake/waffle mix (like Bisquick, Krusteaz, etc.)
  • 1 cupmashed sweet potato (from 1 medium cooked sweet potato)
  • 2eggs
  • 1/2 cupmilk (any kind)
  • 1 tbspoil or melted butter
  • 1/2 tspcinnamon (optional but great)
  • 1 tspvanilla extract (optional)
  • 1 tbspbrown sugar or maple syrup (optional, for extra sweetness)

Steps

12-15 minutes
  1. 1

    In a bowl, combine mashed sweet potato, eggs, milk, oil, vanilla, and sweetener (if using). Whisk until smooth.

    Stir in the pancake/waffle mix and cinnamon. Mix until just combined — don’t overmix. Batter will be thick.

  3. 3

    Heat and grease your waffle iron. Cook each waffle for 3–5 minutes, until golden and cooked through.

  4. 4

    Top with butter, maple syrup, pecans, yogurt, or whatever you like.

  5. 5

    Optional Add-ins:
    -1 tbsp chopped pecans or walnuts
    -Dash of nutmeg or ginger
    -Mini chocolate chips (for a treat)
