In a bowl, combine mashed sweet potato, eggs, milk, oil, vanilla, and sweetener (if using). Whisk until smooth.

Stir in the pancake/waffle mix and cinnamon. Mix until just combined — don’t overmix. Batter will be thick.

Heat and grease your waffle iron. Cook each waffle for 3–5 minutes, until golden and cooked through.

Top with butter, maple syrup, pecans, yogurt, or whatever you like.

-1 tbsp chopped pecans or walnuts
