Winter Melon Tea with Sea Bird's Nest Jelly Drink

Usually, I prepare concentrated winter melon tea in advance and keep it in the freezer. Whenever I make mung bean soup, aiyu jelly, agar jelly, snow fungus, or sea bird's nest, I can add it to create a variety of desserts.
Tips:
*Concentrated Winter Melon Tea Syrup: Prepare concentrated winter melon tea ahead of time and freeze it. You can add it to mung bean soup, aiyu jelly, agar jelly, snow fungus, or sea bird's nest to make different desserts whenever you like.
*Some ingredients are available at specialty Asian grocery stores.
Tasting Notes:
Concentrated winter melon tea is very convenient and doesn't take up much freezer space. If you like it sweeter, just add more concentrated winter melon tea to your dessert. For a lighter taste, dilute with more ice water or ice cubes.

Use a block of winter melon sugar.

Prepare 1 1/2 oz (45 grams) of sea bird's nest.

Rinse the sea bird's nest briefly and cut it into smaller pieces with scissors. Add the sea bird's nest and 1-2 tablespoons of white vinegar to 7 2/3 cups (1800 ml) of hot water. Simmer over low heat for 40 minutes. Strain out the sea bird's nest using a fine mesh strainer, then let it cool completely to set. Once set, it will become semi-translucent and milky white. For the concentrated winter melon tea syrup: Place 1 block of winter melon sugar in 8 1/2 cups (2000 ml) of water and cook until the sugar dissolves.

Strain out any remaining winter melon pieces at the bottom.

Strain out the winter melon pieces from the concentrated syrup, pour into a bottle, and refrigerate. Prepare the concentrated winter melon tea in advance and keep it in the fridge. You can add it to mung bean soup, aiyu jelly, agar jelly, snow fungus, or sea bird's nest to make a variety of desserts.

Once the sea bird's nest has set, it will be semi-translucent and milky white. Cut it into small cubes.

Store the finished sea bird's nest cubes and concentrated winter melon tea in the refrigerator.

When ready to serve, take the desired amount, add some concentrated winter melon tea and ice water to taste, and enjoy this simple dessert.
