Healthy Dessert: Black Fungus Drink (Rice Cooker Recipe)

Every summer when the heat rises, I always remember the refreshing cold treats my mom used to make for us as kids. In recent years, black fungus drink has become a popular summer dessert in our home. You only need a small amount of black fungus to make a delicious drink, and it's very easy to prepare yourself. You can also adjust the texture to your liking.

Tips:
1. Adjust the amount of water based on your preferred thickness. The usual ratio for winter melon tea brick to water is 1:10, so use 10 cups (about 3000 ml) of water for a 10.5 oz (300 g) tea brick.
2. If you don't like the flavor of winter melon tea, you can use regular dark brown sugar instead.
3. If you're worried the winter melon tea will be too sweet, make the tea first and check the sweetness before blending it with the black fungus.
4. Black fungus comes in different sizes. If you buy them at a regular market, use about 6-7 pieces. If you have extra-large ones from a box, 4-5 pieces are enough.
5. Black fungus is available year-round in Taiwan. In cooler weather, you can refrigerate after cooking and reheat before serving for a warm, healthy drink.
6. After chilling the black fungus drink, you can add a little lemon juice or milk before serving for a refreshing twist. In fall and winter, try adding dried longan and a small piece of ginger before blending and simmering.

Prep: 1. Remove the stems from the black fungus and wash thoroughly. Bring a pot of water to a boil, add 1 teaspoon salt, and blanch the black fungus. (This step is also needed if you want to make a black fungus salad.) 2. Rinse the red dates and goji berries, then soak them in hot water. Cut open the red dates and remove the pits. Check with your fingers to make sure no pits remain—this improves texture and protects your blender.

Place the blanched black fungus in a blender and add 2 1/2 cups water (about 600 ml).

Add the goji berries and red dates to the blender and blend together with the black fungus.

Pour the blended mixture into the inner pot of a rice cooker. Add the winter melon tea brick and 4 1/4 cups water (about 1000 ml).

Add water to the outer pot of the rice cooker up to the 60% mark (about 3 cups of water).

When the rice cooker switches off, let it cool, then pour into bottles and refrigerate.
