Wonton Soup (Homemade Wontons)

Making your own wontons is so satisfying. They're bigger and more delicious than store-bought ones. Only homemade wontons can offer such enjoyment!
Tips:
1. The soup base ingredients are for cooking 20 wontons, serving about 3 people. Adjust the quantity based on your and your family's appetite.
2. You can also add some white noodles to the wonton soup to make wonton noodle soup.
3. Toss cooked wontons with spicy chili oil to make spicy wontons.

1. Prepare all ingredients. Clean and wash the green onions and napa cabbage.

2. Chop the green onions into small pieces.

3. You can cut the napa cabbage into sections or leave it whole.

4. Make the filling: 4.1 Mix all the filling ingredients together.

4.2 Stir well and knead until sticky (about 3-5 minutes).

5. Wrap the wontons: 5.1 Place 1 teaspoon of filling in the center of a wonton wrapper.

5.2 Fold the wrapper diagonally to form a triangle.

5.3 Bring point a to point b and press to seal. (If it doesn't stick well, dab a little water on the edges.)

5.4 Pinch to form a shape like a gold ingot.

6. Cook the wonton soup: 6.1 Heat a pot over low heat, add cooking oil, and fry the shallots until fragrant. Add water (or broth) and soy sauce, then bring to a boil over medium-high heat.

6.2 Add the wontons and cook for about 5 minutes. (After the water boils, add half a cup of cold water 2-3 times, similar to cooking dumplings. Alternatively, cook the wontons in another pot of water first, then add to the soup base.)

6.3 Add the napa cabbage and cook until it turns green. Season with salt and pepper. Before turning off the heat, add the green onion pieces (or celery pieces).

6.4 Serve in bowls and drizzle with a little sesame oil. (If you like seaweed or cilantro, you can add them now for extra flavor!)
