Make the batter: For 2 pork cutlets, thoroughly mix 1 egg, 4 tablespoons all-purpose flour (about 30 grams), and 2 teaspoons water (about 10 ml) to form a smooth batter.

Trim any tough connective tissue from the pork loin. Lightly season both sides with salt and pepper. Dip each piece into the batter, then coat evenly with panko breadcrumbs.

Heat vegetable oil in a deep pan to 350°F (180°C). Add the pork and do not move for 10 seconds. Increase the heat to high (about 390°F/200°C) and fry for 3 minutes, turning occasionally to brown both sides evenly.

Remove the cutlets and place on a rack or tray. Let rest for 3–4 minutes to finish cooking with residual heat. The cutlets will be fully cooked and stay crispy. Fry in batches of about 2 pieces at a time. Slice to serve—enjoy the crunch!
