This recipe became a trending favorite, ranking #1 in popular searches for frying methods. Thank you! The technique uses a batter before frying, then lets the cutlets finish cooking with residual heat for a crispy, delicious result.

Recipe background:
I wanted to enjoy pork cutlets that make a crispy sound when sliced, just like at a specialty tonkatsu restaurant. I tried a frying method I saw on TV, and it turned out great. Highly recommended!

Trim any tough connective tissue from the pork loin. Lightly season both sides with salt and pepper. Dip each piece into the batter, then coat evenly with panko breadcrumbs.

  3. 3

Heat vegetable oil in a deep pan to 350°F (180°C). Add the pork and do not move for 10 seconds. Increase the heat to high (about 390°F/200°C) and fry for 3 minutes, turning occasionally to brown both sides evenly.

  4. 4

Remove the cutlets and place on a rack or tray. Let rest for 3–4 minutes to finish cooking with residual heat. The cutlets will be fully cooked and stay crispy. Fry in batches of about 2 pieces at a time. Slice to serve—enjoy the crunch!

Thank you, Acchan, for making this recipe. The cutlets are delicious! My husband loves them too. Fried fish is great, but men especially love cutlets. There's something special about the flavor of good meat.
