Ingredients

  • Ingredients to prepare
  • 1 1/3 lbsfresh shrimp (about 600 grams)
  • 5 slicesginger
  • 1 tablespoonlemon juice (or lemon slices)
  • Broth
  • 3/4 cupShaoxing wine (200 ml)
  • 1 1/4 cupswater (300 ml)
  • 1 sliceangelica root (dang gui)
  • 1 tablespoongoji berries
  • 3dried red dates
  • 1/2 teaspoonsalt
  • 1/2 teaspoonsugar

Steps

  1. 1

    Trim the long whiskers and sharp tips from the shrimp. Make 3 deep cuts on the surface of each red date to help release their sweetness faster.

    In a small pot, add water, angelica root, goji berries, and red dates. Bring to a boil.

    Turn off the heat. Add Shaoxing wine, salt, and sugar. Stir to combine and let cool to make the marinade.

    In another pot, bring enough water to cover the shrimp to a boil. Add ginger slices. Once boiling, add the shrimp and lemon juice. Cook until the shrimp curl into a 'U' shape (a 'V' shape means undercooked, an 'O' shape means overcooked).

    Remove the shrimp and immediately chill in ice water (this makes the texture crisp and firm).

    Drain the shrimp well, then add them to the cooled marinade. Refrigerate overnight.

    Enjoy the next day for the best flavor.
