Red Bean and Sweet Potato Soup (Rice Cooker Version)

On a cool day, if you’re craving a warm, sweet soup, you can easily make red bean and sweet potato soup using a rice cooker—no need to watch the stove.

Tips:

1. You can use either red or yellow sweet potatoes.

2. Adjust the type and amount of sugar to your taste—rock sugar, brown sugar, or regular granulated sugar all work.

3. Adding a pinch of salt enhances the sweetness and keeps the soup from tasting too heavy.

  2. 1rice cooker cup red beans (about 3/4 cup or 150 grams)
  3. 1sweet potato (about 10.5 oz or 300 grams)
  4. 7–8 tablespoons sugar (about 90–100 grams)
  5. Pinchsalt
  6. 7–8 rice cooker cups water (about 5 1/4–6 cups or 1.25–1.5 liters)

Steps

    Rinse the red beans and soak them in cold water for 1 hour. Drain the soaking water.

    Add the red beans and water to the rice cooker. Add 1 rice cooker cup of water to the outer pot, cover, and start the cooker. When it switches to 'warm' (about 30 minutes), let it sit for another 40 minutes.

    About 10 minutes before the beans are done, peel, wash, and cut the sweet potato into large chunks.

    Open the rice cooker, add the sweet potato to the beans, and add another 1/2 rice cooker cup of water to the outer pot. Start the cooker again. When it switches to 'warm' (about 10 minutes), let it sit for another 10 minutes.

    When finished, add the sugar and salt. Stir until dissolved and well mixed.
