Recipe background:
At my family's request, I turned stir-fried vegetables into yaki udon. Mixing stir-fried veggies with noodles opens up lots of recipe possibilities. Sometimes, with Chinese noodles, it even becomes crispy noodles with sauce. Hope you enjoy it!

Place the udon noodles in a skillet and stir-fry, breaking them apart as they heat.

Add the stir-fried vegetables, then pour in the mentsuyu while tasting to adjust the flavor.
