When summer comes, I always crave cold soba noodles. This combination is a classic for me—there’s no way it won’t taste great! It’s perfect for beating summer fatigue.

Cook the soba noodles according to package instructions, either by boiling or microwaving. Use your preferred type of soba. After cooking, rinse the noodles under cold water to chill. (I usually use frozen soba for convenience.)

Place 2 ice cubes in a bowl, then layer the soba noodles, natto, tempura flakes, and chopped green onions in order. (The ingredients marked with ◎ are the basic recipe.) Top with cooked chicken breast if you like.

Pour mentsuyu over the noodles to finish. If using concentrated mentsuyu, the ice will dilute it as it melts. Adjust the amount if using ready-to-use mentsuyu.

Add mentsuyu to taste, adjusting the amount and strength as you like. I usually pour concentrated mentsuyu around the bowl one and a half times. If it’s too strong, add more ice or a little water to adjust.

You can also use Japanese-style grated radish sauce instead of mentsuyu for a different flavor.
