Cashew nuts have the same creamy consistency as dairy cheese because they have the same 42% fat content. Roasted cauliflower steaks and cashew cheese sauce make a delicious dinner. Here is the recipe.
Cooking Instructions

Cut cauliflower in half, top to bottom. Slice off 2 steaks the thickness and size of a T-Bone steak. Save bottom stem, leaves, florets to make cauliflower soup, recipe above. Dip steaks in flour, cornstarch, flour again, cornstarch again, then breadcrumbs, put in cast iron skillet with olive oil spray on bottom, spray olive oil on top of breadcrumbs, put in preheated 350F degree oven, bake 15 minutes.

In cast iron sauce pan, melt cashew cheese in coconut cream, pour over cauliflower steaks when bread crust has turned golden. Bake another 15 minutes till cheese sauce is golden. Use tooth pick to check if cauliflower is tender inside.

Serving suggestion: sprinkle with nutmeg, pepper, salt. Serve on a bed of refried black beans, pairs well with the cauliflower and cheese.
