Ingredients

30 minute bake
2 people
  1. 6” high whole Cauliflower, split top to bottom, then sliced in 1 1/2” thick steaks, make cauliflower soup from unused portion
  2. 2 Tbsolive oil
  3. 1 Tbscornstarch dissolved in 4 Tbs cold water
  4. 2 Tbsflour
  5. 2 Tbsbreadcrumbs
  6. 1 cupCashew cheese
  7. 1 cupcoconut cream
  8. TspNutmeg
  9. Tspground pepper
  10. 1/2 Tspseasalt
  11. Equipment: olive oil sprayer, cast iron skillet, cast iron sauce pan
  12. Cost: cauliflower $2, cheese sauce & other $2, per dinner $2

Cooking Instructions

30 minute bake

    Cut cauliflower in half, top to bottom. Slice off 2 steaks the thickness and size of a T-Bone steak. Save bottom stem, leaves, florets to make cauliflower soup, recipe above. Dip steaks in flour, cornstarch, flour again, cornstarch again, then breadcrumbs, put in cast iron skillet with olive oil spray on bottom, spray olive oil on top of breadcrumbs, put in preheated 350F degree oven, bake 15 minutes.

    In cast iron sauce pan, melt cashew cheese in coconut cream, pour over cauliflower steaks when bread crust has turned golden. Bake another 15 minutes till cheese sauce is golden. Use tooth pick to check if cauliflower is tender inside.

    Serving suggestion: sprinkle with nutmeg, pepper, salt. Serve on a bed of refried black beans, pairs well with the cauliflower and cheese.
