Ingredients

Serves 2 adults and 1 toddler
  • 2 1/2 packsudon noodles (about 18 oz/500 g)
  • 5 oz (150 g)thinly sliced pork
  • 1/3carrot
  • 1/2onion
  • 1 bunchkomatsuna (or substitute with spinach or Swiss chard)
  • 1/6 packenoki mushrooms
  • 2–3 leaves cabbage
  • 1 tablespoonsoy sauce
  • 1 tablespoonsake (or dry cooking wine)
  • 2 tablespoonsoyster sauce
  • 1 tablespoonwater
  • 1 packetdashi granules (about 0.14 oz/4 g)
  • Salt and pepper, to taste
  • Bonito flakes, optional
  • as neededVegetable oil,

Steps

  1. 1

    Slice the onion in half horizontally, then thinly slice. Peel the carrot and cut into thin strips. Roughly chop the cabbage into small pieces.

    Trim the root from the enoki mushrooms, separate them, and cut into quarters. Trim the roots from the komatsuna and chop finely. Cut the pork into bite-sized pieces.

  3. 3

    Heat vegetable oil in a large skillet over medium heat. Add the pork, season lightly with salt and pepper, and stir-fry.

  4. 4

    When the pork is about 80% cooked, add all the vegetables and stir-fry for 2–3 minutes.

  5. 5

    When the vegetables start to soften, cover the pan and let cook over medium heat. Meanwhile, mix together all the ● sauce ingredients in a bowl.

  6. 6

    Once the vegetables are cooked through, add the udon noodles and 2 1/2 tablespoons of the mixed sauce. Stir-fry, breaking up the noodles as they heat.

  7. 7

    When the noodles are heated through, portion out a serving for the child.

  8. 8

    Add the remaining sauce to the pan, season with a little more salt and pepper, and stir-fry everything together.

  9. 9

    Serve the adult portions in bowls and top with bonito flakes if desired.

  10. 10

    [Note] When serving the child’s portion, avoid including fatty or tough pieces of pork, or remove them after serving.
