Chilled Soba with Tomato and Molokhia
Easy and packed with nutrition! This chilled soba features molokhia, known as the king of vegetables, and tomato for a refreshing, healthy meal that's great for your skin.

Remove the molokhia leaves from the stems. Boil the leaves in plenty of hot water for about 30 seconds, then transfer to cold water to chill.

Squeeze out excess water from the molokhia and roughly chop with a knife.

Cut the tomato into 1/2-inch (1 cm) cubes.

In a large bowl, combine the chopped molokhia, diced tomato, mentsuyu, and sesame oil. Mix well and chill in the refrigerator.

Cook the soba noodles according to the package instructions. Rinse thoroughly with cold water, then chill in ice water. Once cold, drain well and serve in bowls.

Top the soba with the chilled tomato and molokhia mixture.

Sprinkle with toasted white sesame seeds. Enjoy! Add wasabi or yuzu kosho to taste, if you like.
