Ingredients

Serves 3 servings
  1. Serves 3: 9 oz dried soba noodles (about 250 grams)
  2. 1large tomato (about 14 oz/400 grams)
  3. 1 package(about 3.5 oz/100 grams) molokhia leaves
  4. 1 1/4 cupsstraight (ready-to-use) mentsuyu noodle sauce (300 ml)
  5. 1 tablespoontoasted sesame oil
  6. 1 pinchtoasted white sesame seeds

Steps

  1. 1

    Remove the molokhia leaves from the stems. Boil the leaves in plenty of hot water for about 30 seconds, then transfer to cold water to chill.

    Squeeze out excess water from the molokhia and roughly chop with a knife.

    Cut the tomato into 1/2-inch (1 cm) cubes.

    In a large bowl, combine the chopped molokhia, diced tomato, mentsuyu, and sesame oil. Mix well and chill in the refrigerator.

    Cook the soba noodles according to the package instructions. Rinse thoroughly with cold water, then chill in ice water. Once cold, drain well and serve in bowls.

    Top the soba with the chilled tomato and molokhia mixture.

    Sprinkle with toasted white sesame seeds. Enjoy! Add wasabi or yuzu kosho to taste, if you like.
