Grate the carrot and onion. For a quicker method, use a food processor to blend them together.

Sauté the grated (or blended) carrot and onion in butter.

Cook over medium-low heat, stirring, until the moisture evaporates and the mixture doesn't burn.

Add all the ingredients marked with ◎ and mix well.

Simmer over medium heat for 15 minutes. For a deeper flavor, simmer over low heat for 30–40 minutes.

While the curry is simmering, prepare the tonkatsu.

Add 3 blocks of curry roux and simmer for about 5 more minutes. For best results, use a spicy Golden Curry roux.
