Ingredients

Serves 3 servings
  • 2 oz (60 g)carrot
  • 1onion
  • 2 teaspoons (10 g)butter
  • 3 1/8 cups (750 ml)water
  • 1bouillon cube
  • 1 tablespoon (3 teaspoons)sugar
  • 1/3 teaspoonblack pepper
  • 1 teaspoonbonito soup stock
  • 1/3 teaspoonchicken bouillon powder
  • 1/2 teaspoonvinegar
  • 1/2 teaspooninstant coffee
  • 1 tablespoon (3 teaspoons)Worcestershire sauce
  • 1 teaspoonturmeric (optional)
  • 3 blocksyour favorite curry roux (1 pack contains 4 blocks)
  • 3servings tonkatsu (Japanese pork cutlet)

Steps

  1. 1

    Grate the carrot and onion. For a quicker method, use a food processor to blend them together.

  2. 2

    Sauté the grated (or blended) carrot and onion in butter.

    Cook over medium-low heat, stirring, until the moisture evaporates and the mixture doesn't burn.

    Add all the ingredients marked with ◎ and mix well.

    Simmer over medium heat for 15 minutes. For a deeper flavor, simmer over low heat for 30–40 minutes.

    While the curry is simmering, prepare the tonkatsu.

  7. 7

    Add 3 blocks of curry roux and simmer for about 5 more minutes. For best results, use a spicy Golden Curry roux.
