Wash the green beans and trim off both ends. Cut them in half lengthwise or on a diagonal.

Cut the fish sausage lengthwise into 4 strips, then cut each strip into 3 pieces. Cut each piece in half (for the rounded ends, cut in half to make about 30 pieces total).

Heat oil for frying.

Mix the all-purpose flour, potato starch, and club soda together.

Pair two pieces each of green bean and fish sausage, arrange them in a crisscross pattern, and coat them in the batter.

Drip a little batter into the oil; if it floats up right away, add the coated green beans and sausage.

Fry until golden brown.
