Simple Oyster Omelet with Tapioca Starch

I made this super simple version using only ingredients I had at home. The texture is a bit different from the traditional version, but it's great if you have unexpected guests or just want a quick snack. Of course, if you have more ingredients, you can use sweet potato starch, potato starch, and rice flour. I also didn't make my own sauce—just used garlic soy sauce paste as a quick substitute.

Ingredients

  1. 1 cuptapioca starch (about 120 grams)
  2. 1 cupwater (about 240 ml)
  3. 16oysters
  4. 1small handful bean sprouts
  5. Garlic soy sauce paste, to taste
  6. 1 tablespoonoil (about 15 ml)
  7. 2eggs

Steps

    Rinse the oysters and pat them dry with paper towels to remove excess moisture.

    Prepare the batter.

    Mix the tapioca starch with water until smooth.

    Pour the batter into the pan, then add the oysters and bean sprouts. Crack the eggs in and cook together.
