I made this super simple version using only ingredients I had at home. The texture is a bit different from the traditional version, but it's great if you have unexpected guests or just want a quick snack. Of course, if you have more ingredients, you can use sweet potato starch, potato starch, and rice flour. I also didn't make my own sauce—just used garlic soy sauce paste as a quick substitute.

Rinse the oysters and pat them dry with paper towels to remove excess moisture.

Mix the tapioca starch with water until smooth.

Pour the batter into the pan, then add the oysters and bean sprouts. Crack the eggs in and cook together.
