Lo's Jerk Beef Casserole
I created this one myself (hence the name), and it's been a big hit with everyone who's tried it. It's really easy to do too and tastes fantastic.
You can put any veg in this and it tastes great.

Steps
- 1
Preheat oven to 160°/gas mark 4.
- 2
Chop all of your veg (the chunkier the better), and put it in a large bowl along with the beef, garlic, chopped tomatoes, and jerk seasoning. Mix the tomato puree in with the beef stock so there's no lumps and pour it over the rest of the ingredients. Make sure everything is mixed well and everything is coated with the mixture.
- 3
Pour into a large lasagne dish and cover with foil. Place on the bottom shelf of the oven and cook for 3.5 hours until beef is tender. Stir once halfway through. Serve with rice, mash or sweet potato
