Once the surface is smooth, reshape into a ball, place in a bowl, cover with plastic wrap, and let rise at room temperature for 1 hour (first rise).

Punch down the dough, divide into 4 equal parts, reshape into balls, cover with plastic wrap, and let rest for about 20 minutes (bench time).

Punch down the dough again, reshape into balls, cover with plastic wrap, and let rise for about 1 hour (second rise).

Brush the surface with beaten egg and bake in a preheated oven.

Once baked, remove from the oven, let cool slightly, and they're ready!
