My kids requested a birthday cake, so following their request, I finally came up with this type of cake. Since it's ice cream, it can be stored in the freezer for a good amount of time. It can be cut into individual slices so that it's easy to eat.Make sure you don't forget to make space in the freezer. You can freeze the cookie dough before or after shaping it, so use your time wisely and plan out when to make it. For 25 x 16 x 5cm [9.8 x 6.3 x 2.0 in] cake pan ~ cut into 20 pieces. This cake is so darn good and incredibly easy!! The cake mix and ice cream possibilities are endless!! We went with white cake and vanilla ice cream so we could dye it green for St Patty's day.

From what I have read this very simple layered ice cream cake was started by Kraft using crumbed Oreo cookies between the layers. Today the variations are endless, with any size you want, adjusting the ingredients and using any flavor of ice cream and adding what suits you. My version is a small cake layered in a loaf pan with mocha chip ice cream layered between the ice cream sandwiches. I used fresh whipped cream to frost the cake with drizzles of chocolate and chopped heath bars for a Crunch decoration. This cake takes minutes to prepare allowing for freezing and makes pretty slices and is delicious!

I wanted to make some ice cream with berries that I harvested. I don't want to eat uncooked eggs since I'm afraid of salmonella poisoning, so I came up with a recipe for an egg-free frozen cake. Italian frozen desserts like cassata and semifreddo gave me inspiration for the idea.I used a loaf pan (21 x 11 x 6 cm) for the cake mold. This recipe makes many servings, so if you need to reduce the amount, I recommend reducing all ingredients by 1/2.You can use a rectangular cake pan for the mold instead. A milk carton might also work. Add liqueur if you like.For the base, use your choice of cake such as sponge cake. You may even use many small strips of sliced sponge cake. Recipe by KT121
