Ingredients

7 days
2 people year round
  1. 1whole six pound salmon, or 2 pound filet of salmon
  2. 1 Cupkosher salt
  3. 1 Cupcane sugar
  4. Equipment: 4 pound rock, 1 pound wooden plank, glass oven baking dish, shrinkwrap
  5. Cost: whole salmon $4 a pound, salt 25 cents, sugar 30 cents, $4.55 per pound

Cooking Instructions

    Filet the sides of the salmon, leave skin on. Coat well with salt and sugar. Stack two halves on top of each other, skin out. Lay in glass baking dish, plank on top, rock on top, shrinkwrap. Put in fridge. Press seven days. Pour off the juices, rinse, dry. Cut salmon on the diagonal across the grain. Serve.
