Ingredients

One hour
Half a pound
  1. Quart(liter) of full milk (not ultra pasteurized)
  2. 1/2 teaspoonsalt
  3. Juice of half a meyer lemon or full small lemon
  4. Cost: $1.20 makes half a pound of fresh cream cheese and cup of fresh wey
  5. Equipment: dutch oven, hand held thermometer, kitchen towel, collander

Cooking Instructions

One hour
  1. 1

    In dutch oven, heat milk to 190F degrees. Stir to keep from scalding,do not boil. Squeeze lemon juice in milk, turn off heat, stir. Wait ten minutes till milk curdles, pour through towel into collander. Squeeze into ball. Save liquid (whey) in fridge for later. Done.
