California Farm Crispy Blue Cheese Omelette
Delicious ten minute lunch with fresh farm eggs, farm made canadian bacon, home made blue cheese on home made sour dough bread. Inspired by cookpad member Ricardo and Melissa Clark.

Beat the crumbled blue cheese into the beaten eggs till cheese is dissolved. Warm skillet to medium, melt unsalted butter with canadian bacon in skillet, 2 minutes. Add egg mixture, place lid on top, bake 3 minutes.

Uncover the omelette, peel edges back with fork to check, crisp 3 minutes, check for nice crispy crust.

Cut slice of sour dough farm bread as thin as the omelette, place omelette on top of bread, cut in half and serve. Add salt and pepper as desired. Enjoy.
