I love buckwheat and meat combinations, see our traditional California farm recipes in here of spam, meatloaf and bratwurst. Buckwheat chicken liver breakfast patties are a Ukranian recipe. I soaked the livers in milk to remove the liver taste. I substituted eggs and butter with sesame seeds and lard. Food can be frozen longer if it does not contain dairy or egg products. Ingredients

Prep 1 hour, panfry patties 4 minutes each side
2 people
  • 2 cupschicken livers, soaked in milk 10 minutes, rinse well
  • 1 cupGreen onion, chopped
  • 1/2 cupbuckwheat flour
  • 1/2 cupsesame seeds
  • 4 Tbslard
  • 4 TbsMustard
  • 2 cupswater
  • Salt and pepper added after tasting
  • Equipment: cast iron dutch oven, cast iron skillet, ice cream scoop, handmixer
  • Cost: liver $2, sesame seeds, buckwheat flour, 50 cents, green onions, other 50 cents, 15 breakfast patties for $3, 20 cents a piece

Steps

Prep 1 hour, panfry patties 4 minutes each side

    Soak livers in milk, 10 minutes.

    On low heat, roast livers, green onions, sesame seed in mustard and molten lard. When livers are cooked white, about 20 minutes, turn up the heat and add 2 cups water and puree with handmixer. Add spoonfulls of buckwheat flour, stir till thick. Taste, add salt and pepper, mix, cool to stiffen.

    Cool, ladle ice cream scoop full of mix onto oiled medium heat skillet, fry bottom, then press flat, flip, fry on both sides, serve.

    Makes fifteen breakfast patties. Freeze individually in parchment paper in freezer bag.
