Moth Dal Vada with Bottle Gourd

Today, for the first time, I made vadas using moth beans, and everyone loved them as an evening snack. Usually, vadas are made with chana dal or split urad dal, but I tried them with moth beans and they turned out great. To make them crispy and delicious, I used flattened rice (poha) and lemon juice. This is a crunchy and tasty snack. Moth beans are a nutritious legume, rich in protein and a good source of vitamin B. They also contain iron, copper, magnesium, calcium, potassium, phosphorus, sodium, and zinc.

Steps
- 1
Rinse the moth beans 3 to 4 times with water, then soak them in water.
- 2
Let the beans soak for 5-6 hours until they are well hydrated. Once soaked, drain them using a strainer.
- 3
Grate the bottle gourd and squeeze out the excess juice. Set the juice aside.
- 4
Add the soaked moth beans to a blender jar. Add ginger, cumin seeds, and a pinch of asafoetida (hing).
- 5
Add the poha and blend everything together. Transfer the mixture to a bowl.
- 6
Add the finely chopped onion, red chili powder, chaat masala, grated bottle gourd, and salt to the mixture.
- 7
Finely chop the mint leaves and add them as well.
- 8
Shape the mixture into vada (patty) shapes.
- 9
Heat cooking oil in a deep pan or wok over medium heat. Fry the vadas on both sides until golden brown.
- 10
Do not fry the vadas on high heat, or they may remain raw inside.
- 11
Your crispy and delicious moth dal vadas are ready.
- 12
Serve the moth dal vadas hot with your favorite chutney or sauce and enjoy!
