Gulkand Modak

Add fresh grated coconut and jaggery in a kadai and saute well. Then add cardamom powder and gulkand and saute well. Once the jaggery dissolves and mixture becomes thik, your stuffing is ready.

Sieve the rice flour. Heat 2 cups of water in a pot. Add salt and ghee to it, bring it to a boil, add rice flour and mix well. Keep covered for 2 minutes. Now turn off the gas and let the mixture rest for fifteen minutes. Now take the hot water and knead the water well. While mixing, add pink food color and mix well.

Now take a small ball of pink dough and divide it into a thin bowl with your hands and fill it with stuffing and pinch their ends with finger tips to give desire shape of modak.
Add water to the steamer, put a strainer on it, put the prepared modak in it and steam it for 15 minutes. - 4
Make all likewise.

Serve the modaks by adding tsp of ghee over it.
