Tandoori flavor, smoke and color in your air fryer. No exotic ingredients, tools, or clay tandoori oven needed. Easy Tandoori marinade. This shows you how to infuse tandoori smoke and color with your air fryer. Works every time.
The secret is you can make smoke splatter free in your fryer with clarified butter coated hardwood chips. Very little smoke and less time are needed because air fryer ovens recirculate the smoke and heat inside the airfryer. I use a metal measuring cup.

Cauliflower steaks are firm and thick, I steam them and then marinade them overnight.

The unbreaded version is spicier like beef, the breaded version is milder like pork.

Ingredients

8 Hour marinade, 1/2 hour smoke air fryer
2 people
  1. Make the tandoori smoke for taste and color:
  2. 2 Tbsclarified unsalted butter
  3. 1/2 cuphardwood chips
  4. Make the tandoori marinade:
  5. 1/2 Tspeach ginger, garlic, mild red pepper, sweet paprika, smoked paprika, cumin, cardamon, mustard, turmeric, himalayan black salt, optional garam masala powder
  6. 2 Tbspeanut oil
  7. 1 cupgreek yoghurt
  8. 2 Tbslime juice
  9. 1/2 Tsppowdered turmeric
  10. Marinade the tandoori cauliflower:
  11. Slice2 cauliflower steaks 3/4” thick, from the center of the vegetable, microwave 1 minute
  12. 1 cuptandoori Marinade, brushed on both sides
  13. For breaded, add spray of olive oil, and cover with bread crumbs
  14. Tahini Sauce for dip:
  15. 2 Tspgreen Harissa paste
  16. 1 TspAleppo Red Pepper
  17. 1 Tbspressed hardneck garlic
  18. 1/4 Tspseasalt
  19. 1/3 cuptahini
  20. 1/3 cupicewater
  21. Serve with pita bread sticks and fresh fruits
  22. Equipment: microwave, metal measuring cup, airfryer, brush, skillet
  23. Cost: 2 cauliflower steaks $2, marinade ingredients $1, clarified butter and hardwood chips 50 cents, per person $1.75

Cooking Instructions

8 Hour marinade, 1/2 hour smoke air fryer

    Melt stick of unsalted butter in measuring cup in micro wave, 1 minute, skim foam off the top, pour off the pure clarified butter, leave butter water in the cup on the bottom, so there will be no splatter. Put 2 Tbs of clarified butter on top of hardwood chips in metal cup.

    Heat 1/2 cup hardwood chips with clarified butter in cast iron skillet, put in metal measuring cup, light, flame 3 minutes, blow out flame, place inside airfryer. Gives one hour of smoke.

    Make a thick marinade. Roast fresh spices in cast iron skillet in peanut oil first till fragrant. Then add dry spices, roast till fragrant, stir. Add to yoghurt, mix. Then add flavor and color by stirring in lime juice with 1/2 Tsp turmeric powder.

    Microwave steam cauliflower steaks 1 minute in microwave, cool. Marinade thick cauliflower steaks overnight. Grill the marinaded thick cut cauliflower steaks. For unbreaded steaks, Slide in preheated 400F degrees smoking air fryer oven on rack, smoke and grill 15 minutes each side.

    For breaded steaks, spray marinaded steaks with olive oil, then cover both sides with breadcrumbs, then smoke and grill at 400F degrees, 30 minutes top side.

    Dip tandoori cauliflower steaks in spicy tahini dip: mix harissa, aleppo red pepper, garlic, salt, tahini, icewater, serve with pita bread and fresh fruits.
