Most Sundays are relaxed days for us . I make 1 pot meal on Sundays. It can be Indian , Mexican, or Italian .
Vegetable Au Gratin is one such dish which I usually serve with garlic toast & a glass of wine 🍷.

White Sauce : Heat the butter in a pan. Add garlic & saute for 1- 2 seconds.

Add All-purpose flour / maida & saute for 2 - 3 minutes.

Add warm milk slowly, stirring constantly so that lumps do not form. Switch off the gas. Keep it aside.

Sauting the veggies : Take butter in a pan.When the butter melts, add the veggies. Saute for 2 minutes so that the veggies are coated well with butter. This will give the veggies a lovely taste.

Now add the grated cheese & mix well. Add white sauce in the veggies & cook for 1 minute.

Pour the mixture in a greased oven proof dish. Cover the baked dish completely with grated cheese & dot with butter. This will bake & brown the dish evenly. Bake in a pre - heated oven 200 c for 15 minutes. Serve hot with bread of your choice.
