Steps
- 1
I used chicken breast for this recipe you can use chicken thighs also. Clean and wash it and pat dry it. Then cut it in small cubes. Keep it in a big bowl and add all the dry powdered spices to it mentioned above in the ingredient section of kabaab. I'm using kachri powder as a tenderizer you can use any tenderizer or you can use raw papaya paste. Then add cream to it. You can use the malai of milk also. Then mix them all very well with the chicken and marinate it for half an hour.
- 2
While the chicken pieces are marinating meanwhile let's start doing other preparations. Let's make chutney for that grind all the above mentioned ingredients of chutney in the ingredient section to a fine paste and keep aside. Now grind onions, ginger, garlic and green chillies. It must be coarsely grounded then add the marinated pieces of chicken to it and grind them all together. Like so grind all the marinated chichen and take it out in a big bowl. Mix it very well so that it combines well.
- 3
Now add dry roasted gram flour to it so that it combines well while making kabaabs. You can also use 2 or 3 slices of bread in place of gram flour. If you still find the mixture loose put it in the refrigerator for half an hour and then start making kabaabs. First grease your hand with oil and then take a small portion of mixture and make it in a cylinder shape and finally insert a skewer or pencil or anything to make a hole in it. You can make it of any shape and size.
- 4
Now let's start frying it for that take a pan or griddle add 1/4 cup oil to it and start adding the prepared kabaabs to it. Fry it on medium flame from all the sides untill got a beautiful golden brown colour. Likewise fry all the kabaabs. Now in the same pan and same oil add the prepared chutney and cook it till the rawness of ginger garlic goes away and oil ooze out. Then add the fried kabaabs to it and coat it with the chutney. Coat the kabaab very gently and softly so that it won't break.
- 5
Now add the diced bell peppers to it along with onion rings and green chillies and mix well. Cover it and cook it on low flame for 5 minutes then off the flame and the chutney kabaab is ready to be served. Serve it with the choice of your bread or rice and enjoy it with your loved ones.
You can even freeze these kabaab while it's a paste or after shaping it into the kabaabs or after frying. Keep it in the freezer or deep freezer and enjoy for 15-20 days. - 6
Do make it once and enjoy with your loved once.
Happy Cooking 😊
