Tandoori flavor, smoke and color in your air fryer. No exotic ingredients, tools, or Clay tandoori oven needed. Easy Tandoori yoghurt marinade. This shows you how to infuse tandoori smoke and color with your air fryer. Works every time.

Ingredients

Overnight marinade, 30 minute smoke
2 people
  • 4chicken drumsticks
  • 2 Cupstandoori yoghurt marinade for air fryer
    California Farm Tandoori Marinade
  • 1/2 cuptandoori hardwood smoke pellets
  • 2 Tbsclarified ghee butter from 1 stick unsalted butter
    California Farm Clarified Ghee Butter
  • Equipment: metal cup, air fryer
  • Cost: chicken $2, yoghurt marinade $1, hardwood chips, charcoal 50 cents, butter 50 cents, $2 dinner

Steps

Overnight marinade, 30 minute smoke

    Make the tandoori marinade, slice chicken to let marinade penetrate, and marinade drumsticks overnight in fridge.

    Clarify the butter so it does not splatter. Melt butter stick in glass measuring cup in microwave, one minute. Let settle. Skim foam off the top, pour molten butter fat in glass, leave water on the bottom. Put 2 Tbs clarified butter on top of pellets.

    Preheat airfryer to 450F degrees. Heat 1/2 cup of hardwood pellets and 2 Tbs clarified butter in cast iron skillet till smoking, transfer to metal cup. Light with match, flame 3 minutes, blow flame out, place metal cup on bottom of air fryer. Air fryer will cook with smoke for an hour.

    Lift chicken drumsticks from marinade, dripdry, place marinaded chicken drumsticks on rack, smoke and grill 30 minutes at 450F degrees. Turn to broil, 3 minutes to charcthe outside. Serve tandoori chicken warm or cold.
